- Veggies: red pepper, yellow pepper, onion, mushrooms
- Fajita seasoning
- EVOO
- 2 eggs (for one person, 4 for 2 people)
- Shredded cheese
- Salt and pepper
- Heat some EVOO on medium heat. Add your veggies and saute. Add salt and pepper and fajitia seasoning for flavor. Heat for about 5-8 minutes.
- Add two eggs to the mix. Heat until done and scramble. Add cheese to the top at the end.
