- 3-4 pounds lamb shank, cut in half
- 16 oz frozen italian veggies
- 1 can of cannellini beans
- 1 can of italian tomatoes
- 1 cup of chicken broth
- 1 cup pesto with basil
- Mix together veggies, tomatoes, beans, broth, and pesto in a medium bowl.
- Place lamb shanks in bottom of slow cooker. Top with mix above.
- Cook on low for 10-12 hours or high for 5-6 hours.
