- 4 eggs
- 1 cup grated cheddar cheese
- 1/2 onion chopped
- 1/4 cup marsala wine
- EVOO
- Salt and pepper
- 4 slices of bacon
- Saute your onions in EVOO and season with salt and pepper. Meanwhile cook up your bacon in a separate pan.
- Add some marsala wine during the last 1-2 minutes of cooking the onions. Remove and mix in a bowl with the 4 eggs and scramble them up.
- Take a small skillet (with pam) and add the egg mixture with onion to it. Cook on medium high until done and fluffy. Add salt and pepper and top with cheese at the end. Serve with 2 slices of bacon per plate.
